Prime cost combines food, beverage, packaging and labor. It is useful for monitoring major controllable operating costs, but a sustainable percentage varies by concept and service model.

Annual ROI compares annualized operating profit with the startup investment entered. It is not an accounting return after tax, financing or depreciation.

Payback assumes monthly profit remains constant. New restaurants commonly experience ramp-up, seasonality and opening inefficiencies, so test slower-sales and higher-cost cases.

It estimates monthly operating profit, net profit margin, food cost percentage, labor cost percentage, prime cost percentage, annual profit, annual ROI and startup investment payback from the values entered. It is a planning model rather than a complete accounting statement.
Include equipment, kitchen systems, furniture, technology, buildout, renovations, permits, signage and opening inventory. Add other material pre-opening costs to the closest startup field so ROI and payback are not based on an incomplete investment amount.
Food cost percentage equals monthly food and beverage cost divided by monthly revenue. Labor cost percentage equals monthly payroll-related cost divided by monthly revenue. Use revenue and costs from the same period.
The calculator multiplies monthly operating profit by 12 and divides the result by the entered equipment plus buildout investment. It assumes the monthly result continues for a full year and does not automatically include financing, tax, depreciation or working-capital changes.
Operating break-even is the monthly sales level where revenue covers fixed and variable costs. Payback is the number of profitable months required to recover startup investment. A restaurant can reach monthly break-even long before its opening investment has been recovered.
